  1. My favorite Tex Mex recipe is Fiesta Chicken
    1/4 cup all-purpose flour
    1/4 teaspoon salt
    1/4 teaspoon pepper
    6 skinless, boneless chicken breast halves
    1 tablespoon vegetable oil
    1 jar (about 10 oz.) salsa
    4 green onions, sliced
    1 can sliced ripe olives, drained
    1 package (16 oz.) yellow rice, cooked
    sour cream
    shredded sharp cheddar cheese
    chopped cilantro (optional)

    Combine first 3 ingredients; roll chicken in flour mixture. Brown chicken in oil
    in a large skillet over medium-high heat. Add tomatoes and next 2 ingredients.
    Heat to boiling, reduce and simmer 20 minutes or until sauce has thickened.
    Serve chicken mixture over yellow rice and top with sour cream, cheddar cheese,
    and cilantro, if desired. Makes 6 servings

  2. My favorites are homemade guacamole and pico de gallo. They're both amazing!

    Pico: tomato, onion, cilantro, salt and lime juice.

    Guac: avocado, lime juice, salt, cilantro, garlic, onion and sometimes I'll add tomato.

  4. My favorite Tex Mex dish is very similar to the Fiesta Chicken recipe Owen's Mom listed above, with a few Poblano Peppers added for mild heat.

  10. cafe rio is my favorite tex mex! sooooo good! here's the recipe for the pork:

    cafe rio pork (for burritos or salad)

    3.5 lbs pork roast
    1 bottle taco sauce (8 oz)
    1 T cumin
    1 C brown sugar
    1 can Coke (not diet)

    Cook pork in pot on low for 6 hours (cover roast 1/2 with water. I cooked for a couple of hours on high and switched to low, that made it shred easier; also, when you add the other ingredients, please take out some of the water, leaving only about ½ in. in the bottom of the pot). Add ingred. to pork 3 hours before it is done.

  12. Spinach enchiladas are a favorite of mine. Filling is almost like a creamed spinach with fresh corn and diced onions added. Top with a white queso sauce...mmmmmm!

  19. I live in Texas so choosing a favorite Tex Mex recipe is almost impossible. One that I'm particularly proud of is my recipe for Confetti Chicken. I invented it! It's chicken breasts cooked in a cast iron skillet in the oven with black beans, cilantro, corn, and pico de gallo with melted jack on top. MMMMMM!

  24. I love fish tacos. Usually I use mahi mahi and season them with oregano, cumin, salt, pepper, lime juice and serve them with chopped onion and cilantro in corn shells.
